Title: Exploring the Use of Natural Colors to Meet Consumer Expectations

2-Sentence Summary: This session will address the challenge of using natural colors as an alternative to synthetic colors and demonstrating where it is possible to match or out-perform them in select applications.

Description:

Increasingly, food processors are switching to natural colorants and moving away from synthetic options. This presents some challenges, as natural colorants are thought to be having limitations of their own. However, if some conditions are met, natural colorants can be successfully used to color different applications. We will discuss the conditions in which natural colors can be used to get maximum performance. Also, different ways and suitable points of addition of these colorants in the process will be discussed. We will also discuss the preferred forms of addition. With the use of suitable colors and conditions of use, customer’s increasing expectation for innovative products and vibrant hues in this space can be met. This is enabled by new innovations in the development of the natural colors.
